Is there a way to make it where certain skills are only used on grind rather than assist? For example, i would like to have my SCH pet summon only on grind mode and not assist.

Not atm, closest you can get is to assign it to only work when a certain filter is on or off, and then kick that filter on or off when you're running grind mode.
