I do harvesting for both of my gathering and crafting materias. I use SB potions, FC bonus, 2 +3 rings and go harvest a whole bunch of stuff. It works well enough for me. Note that each +1 adds 10% bonus to SB speed.
Sorry, but I never had a need to farm DOM/DOW materia. I would imagine grinding mobs either in dungeons or outside of them would be optimal. Wearing gathering gear on a DOM/DOW class would probably reduce it's speed at killing things since you have to do things that are close to the level of the gear you are spirit bonding.
